Description
| This dataset supports the study "In Vitro Gastrointestinal Digestion of Calanus finmarchicus Products: Amino Acid Composition, Degree of Hydrolysis, Antioxidant Capacity, and Antidiabetic Activity". It includes proximate composition data (protein, ash, water, lipid) and total/free amino acid (TAA/FAA) compositions for fresh-frozen C. Finmarchicus (FFCF), freeze-dried C. Finmarchicus (FDCF), and C. Finmarchicus hydrolysate (CFH). A static in vitro gastrointestinal digestion model was employed to track digestion dynamics-FAA profile and o‑phthaldialdehyde (OPA)-based degree of hydrolysis (DH)-and to assess the effects of digestion on bioactivity. Antioxidant capacity was determined by ferric reducing antioxidant power (FRAP) and oxygen radical absorbance capacity (ORAC) assays, and antidiabetic activity by dipeptidyl peptidase-IV (DPP-IV) and protein tyrosine phosphatase 1B (PTP1B) inhibition assays. Samples active in the PTP1B assay were counter-screened against T-cell protein tyrosine phosphatase (TC-PTP) to assess selectivity. |
